118. Cake – A Traditional Tea Loaf

350g mixed dried fruits, 110g demerara sugar, 1 large egg, 250ml cold strong black tea, 225g Self-raising flour

A 1lb loaf tin greased and lined.

Method - pre-heat oven to 150C/Fan 130C/gas 3. Place the dried fruits, sugar and tea in a large bowl, cover and leave overnight or to soak for at least 6 hours.

Pre-heat the oven. Beat the egg and flour into the soaked fruits until smooth. Spoon into the prepared tin and bake for 1 to 1 1/4 hours until skewer comes out clean. Cool in the tin.

121. A Flower arrangement - in a medium size teapot. 

122. Home produce – A jar of Beetroot and Apple Chutney

3lbs beetroot, 2 lbs apples (baking), 3/4 lb brown sugar, 1 lb onions.1/2 tsp ground ginger, juice of 1 lemon, 1 tsp salt, 1 pint vinegar.

This recipe makes approximately 9 jars.


Boil beetroot for 1 1/2 hours. Skin when cold and chop up small.

Peel and chop apples and onions. Add all ingredients to vinegar, salt and lemon juice. Boil for 30 minutes.


Warm jars and pour chutney into them while still hot. Seal carefully.
